Ice Cream Sandwiches
It’s National Ice Month!
There’s nothing better than a mid summer’s ice cream when you’re melting on a hot day… except for maybe a scoop of your flavorite ice cream smooshed in between two tasty cookies! So you scream, I scream, and we all scream to celebrate Ice Cream month together!
Here’s the scoop on how to make the most in-CONE-ceivably delicious ice cream sandwiches you've ever had.
Chocolate Chip Cookies:
1 1/4 cups unbleached all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
7 tablespoons unsalted melted butter
1 cups brown sugar packed
2 tablespoons granulated sugar
1 egg
1 teaspoon vanilla
1 cup chocolate chips
Your favorite ice cream
Sprinkles or mini chocolate chips
Preheat oven to 375 degrees Fahrenheit. Combine dry ingredients in medium bowl and set aside. Mix together melted butter, sugar, and vanilla in large bowl. Add egg. Combine wet and dry ingredients. Add chocolate chips.
Place large spoonful of dough on un-greased baking sheet. Bake for 12 minutes or until golden and crispy. Allow to cool completely before making ice cream sandwiches. Enjoy immediately, or place in freezer.
